This recipe is adapted from the Pretty Pies Healthy Desserts blog, and it's quick, easy, and super low-carb, but a very satisfying chocolate treat.
2 cups High Key Keto chocolate crispy cereal (or 1 c cereal and 1 cup chopped peanuts) - you can use Rice Krispies (GF), but then it'll be about 10g carbs per serving. With High Key, it's less than 1g.
1/2 cup natural (no sugar added) peanut butter
1/4 cup coconut oil (or butter if not going for vegan)
3 Tbs cocoa or cacao powder
3 Tbs powdered monkfruit sweetener
1/2 tsp vanilla
a pinch of salt
Line an 8x5-inch dish with parchment paper. Melt peanut butter and coconut oil in large bowl in microwave in 30-second intervals. Next, stir in cacao, sweetener, salt and vanilla and whisk to combine. Fold in cereal (or cereal and nuts), then pour mixture into parchment-lined pan, and press evenly into pan. Cover and chill until set. Makes 12 servings
