Finally Friday: Bread!

I finally baked some sandwich bread. I need to tweak the recipe a bit... Less yeast, longer rise time perhaps. We'll see what round two looks like.

If the kids insist on white bread, at least it can be homemade.

Lunch: Not PB&J

Wordless Wednesday: Out of bread...

Lunch for the boy...

Baked teriyaki tofu cubes, carrots, apple, and mini chocolate chip cookies. Basically, a Trader Joe's lunch.

Final lunch pre-Spring Break. April already, and only 10 weeks of school left. Crazy fast.

How Entertaining

For a farewell BBQ for friends moving to California soon...

Super Pi Day Weekend

Peanut Butter Pie at the Colophon Cafe in Fairhaven for dessert on Pi Day, then French-style apple pie for dinner at home tonight! Because we had a late lunch at 3:00 today, so why not?

The Original Girl Scout Cookies

When the Girl Scouts started selling cookies, this was the recipe they used. Each girl baked the cookies at home and sold them to family and friends to earn money for their troop. So, for our meeting today (and since it's cookie season), I made these for our troop. I did melt some semi-sweet chocolate to pipe a question-mark on each cookie since they were earning their Detective badge today. The girls proclaimed them "absolutely delicious," and they're right!

1 c. butter
1 c. sugar
2 Tbs. milk
2 eggs, beaten
1 tsp. vanilla
2 c. flour
2 tsp. baking powder

Cream butter and sugar, then add well beaten eggs, milk, vanilla. Next add flour and baking powder, and combine. Then roll out and cut into shapes, or scoop into balls and bake on parchment. Sprinkle sugar on top if desired, and bake in a quick oven (375-degrees F) for about 8 minutes per pan.

This amount can make six to seven dozen.

The original and best...

Unfussy: Hernekeitto

Made pea soup for dinner. Erik was not pleased. "But, I hate peas. I have always, always hated peas." True enough. I might have told him that herne are "special Finnish peas" and this is my favorite soup. So, he (very reluctantly) tried it. And, as often happens, he was pleasantly surprised. Thumbs up from Erik (even with his post-soccer hair).

And, Mads had a second bowlful, so she's a thumbs up there too.

Beastmode Birthday Cake!

I've been told this was "quite an ugly cake, not up to [my] usual standards," but it was tasty and the recipients loved and appreciated it, so it's all good.
