Unfussy: Enchiladas

Chicken enchiladas made with rotisserie white meat from Costco, two cans of pinquinto pink beans, enchilada sauce and sharp cheddar. Good flour tortillas.

Erik was not interested. However, both kids gave these a thumbs "way" up. Yippee.

Unfussy: Rice Pudding

Mads was a no on this, and Erik was a thumbs-up on the rice pudding but not on the cherries.

Leftover Rice, Rice Pudding 

1 c. cooked rice
1.5 c. milk
1/4 c. sugar
1 tsp. vanilla
1/4 tsp. cinnamon
dash salt
1/2 c. dried cherries (or other dried fruit)

Mix all ingredients except the dried fruit in a saucepan over medium-high heat until boiling, turn down to low to simmer for 15-20 minutes. Add dried fruit just before you reduce the heat.

Pioneer Woman's Chicken Tortilla Soup

Cilantro. It's my very favorite herb ever. Deliciousness personified.

It's delicious, just the right amount of spicy, and I made a triple batch today! Some for my friend Gina, who is recovering from surgery, some for Trilogy (who just had a baby boy), and some for our own family, because if you're house smells this heavenly, there is no way that you can't keep some for yourself!

Green Stuff

This is one of E's favorite green foods, and it's delish! I served it at his birthday, and have had a lot of requests for the recipe, so here it is!

Erik's Fave Spinach Souffle
(although this recipe came from Martha's Everyday Food magazine, I've changed it enough that I consider it Erik's recipe)
Cooking spray or butter (to grease casserole) and
About 1/4 c. bread crumbs
1 Tbs. butter
3 Tbs. flour
1.5 c. milk
1/2 tsp. salt
1/4 tsp. pepper
2 egg yolks
1 pkg frozen, chopped spinach (defrosted and drained - squeezed, really)
1 c. Parmesan cheese
4 egg whites
Pinch cream of tartar

Preheat oven to 400-degrees F. Melt butter in saucepan and add flour. Stir and cook about 3 minutes, then slowly add the milk, salt and pepper. Stir until smooth and add egg yolks (temper first by adding several tablespoons of hot milk mixture to the egg yolks, then add the warmed yolks to the pan). Cook about 3 more minutes, or until Bechemel (white) sauce is thickened. Remove from heat and stir in drained spinach and Parmesan. NOTE: to make this recipe more kid-friendly, I chop the chopped spinach very fine in my food processor for more incorporated "green" bits , and use the Paremesan in the green can (milder flavor), but I didn't do either of these things for Christmas dinner at my in-laws house, and it is fabulous without these steps, using fresh, grated Parmesan as well.

Whip the four egg whites with a pinch of Cream of Tartar in your Kitchenaid with whisk attachment until soft peaks form. While it's whipping, grease a 2-quart casserole and coat with bread crumbs. When whites are ready, stir 1/3 of them into the spinach mixture in the pan, then when incorporated, fold the spinach mixture into the rest of the whites.

Pour into the prepared pan, reduce the oven temp from 400 - to 350-degrees F, and pop into the oven immediately, to cook for about 30 minutes (until "set" and golden-brown on top).

Serve warm, cold or reheated! Even if this baby falls, it's still delish.

A Side of... Rainbows



Rainbow chard has been my fave veggie this summer, and I created a really easy recipe that is delicious and a power-house of nutrition!

Rainbow Chard Saute

1/2-1 T. extra virgin olive oil
2 large bunches of Rainbow Chard, ribs removed
1 can S&W Pinquinto beans (pre-seasoned with cumin, garlic, etc.)
4-6 oz. of crumbled goat cheese

Chop the chard into small pieces (maybe 1/2-inch square), then toss in preheated olive oil - in a saute pan. Wilt it down fairly well, then dump in the can of beans. Toss and cook a couple minutes more, then remove from heat. Sprinkle goat cheese of top and toss once. Serve immediately.

I Love The Swiss Chards!

So, tonight I cooked up come of our recent farm-collected greens (rainbow chard, totsoi and some red mustard) with a little turkey kielbasa for dinner (washed, chopped and sauteed in a little olive oil and butter 1 tbs. each, crushed garlic, lemon pepper, sliced light kielbasa and a little low-sodium chicken stock to simmer). M was interested in the "salami," but eyed the greens suspiciously. When I tasted mine and deemed them delicious, she looked over at a box on the edge of the table and pointed to some words on the side, "Mama, it said right here that I should not put that stuff in my mouth." Oh, yeah, really? I replied. Well, it's delicious, you should try it. "I don't like it." says M. How do you know, huh? Sam I Am, Green Eggs and Ham - it might be your new favorite thing. Try one bite. And, so she did. "Wow! I love it! It tastes salty. Yum!" (she loves salty things and the kielbasa did indeed make it taste salty). When Joel came home she said, "Papa, I LOVE the Swiss Chards! They are salty and buttery and delicious in my rumble tummy!"
E tasted a bite, but after that was quite clever about avoiding any greens completely, including flicking them off his fingers. Ah, well. I'll just have to chop the next batch up and bake it into some quiche... Bwahahahaaha!!

And, in other news... M ate our first golden raspberry today. There are a lot more on the canes ready to ripen. Come on sun!

April Showers...

The weather today (and the fact that I had leftover grilled potatoes and grilled onions) begged for meatballs. Plus, Mom & Vesa just replenished our lingonberry stock from IKEA. So, here's Lora's fabulous recipe:

Swedish Meat Balls


1 lb. hamburger
1 beaten egg
1/2 c. bread crumbs
1/4 tsp. pepper
1/2 tsp. salt
pinch nutmeg

1 3/4 c. beef stock

Combine all ingredients, roll into balls, let stand for 5 mins. Brown in skillet, then simmer in 1 3/4 c. beef stock for 30 mins. Remove meatballs and add 2 T. flour and 2-4 T. minced onion to stock to make gravy.

Goin' Bananas

My mom's banana bread recipe is excellent. My earliest memory of these is eating them warm from the oven, slathered in butter, when I was three years old. Just smelling them baking is reassuring and feels like home.

I couldn't find my white recipe binder tonight (shocking because it's huge...), but Mom & Vesa were over (helping with dinner, and playing and cleaning) and Mom of course knew the recipe by heart so scribbled it down on my fridge notepad. Erik, the little monkey, couldn't resist scrambling up to investigate as soon as I moved these from oven to cooling rack. I warned him they were hot — he knows that word well now, but touched one anyway. Sure enough. "Hot Mom-mee!" and here he is signing Hot to me too.

Monkey Muffins (aka Grammy's Banana Bread)

1 stick softened butter
1 -1/2 c. sugar
5 T. sour milk (4 T. milk + 1 T. citrus juice)
2 eggs
3 mashed (very ripe) bananas
1 t. vanilla
2 c. flour
1 t. baking soda
1/2 t. salt
(1/2 c. chopped nuts, optional)

Bake in muffin tins for about 17 mins. Makes about 22 muffins.
